Eggs, Tomato and Avocado

Breakfast for lunch... it's a great idea, right?

When you're trying to lose weight, but you either don't LIKE salads or just get so tired of them, this is definitely a wonderful alternative.

Eggs, tomato and avocado, with or without hot sauce (I always choose the "with" option).

I prefer to mix one egg with two egg whites (you technically get 4 egg whites in place of one full egg on the updated 21 Day Fix plan but that is a LOT of eggs), scramble in coconut oil, add the tomatoes at the last minute to soften them and then transfer to plate and top with 1/2 a small avocado.  

And then I add enough hot sauce to melt my face.  You can also add fresh herbs or even salsa or peppers to tweak the recipe into new forms.
