Meatballs and Veggie Quinoa

My daughter asks me to make turkey meatballs for dinner about every other week.  I usually do a dinner of meatballs with tomato sauce over spaghetti squash or whole wheat noodles, and then the next day for lunch I'll use leftovers with a salad, or in this case, a salad and quinoa.

Here's the recipe for the meatballs.

Serve with quinoa (cook it yourself and add chopped peppers and zucchini or find it premade in the frozen foods section and a spinach salad and you're good to go!!

This one is a bit harder to count the containers, so I probably wouldn't use it as a go-to for a first 21 Day Fix round, but later when you're not following as strictly, I would count this meal as pictured as:

2 green
1 blue
