Southwest Taco Salad
This is SO good. Can't even tell you how good, you just need to make it. I found this recipe from eMeals. I don't rep for the company or anything, but if you need some awesome new recipes, I definitely suggest it.
Here's what's in it:
1 Tbs coconut oil
3/4 lb ground turkey
1 clove garlic, minced
1 Tbs Southwest seasoning
2 Tbs fresh lime juice
1/2 tsp garlic salt
2 Tbs extra virgin olive oil
2 Tbs chopped fresh cilantro (or parsley)
1/2 (12-oz) pkg romaine lettuce hearts, shredded
1 ripe avocado, diced
2 roma tomatoes, seeded and chopped
1 small jicama, peeled and shredded
Heat oil in a large nonstick skillet over medium-high heat; add ground turkey, garlic, seasoning. Cook 8 minutes or until turkey is no longer pink, stirring occasionally. Whisk together lime juice and garlic salt in a small bowl until blended. Gradually whisk in oil, blending well; stir in cilantro. Divide lettuce, turkey, avocado, tomato and jicama between 2 plates; drizzle with dressing.
That's the official recipe. You can "Fix it" by measuring your ingredients in the containers.
Red = Ground turkey
Blue = Avocado
Green = Lettuce
Green = Tomatoes and Jicama
Tsp = oils
