This is one of those meals I never thought I would enjoy. I am a bit carb lover, historically. I couldn't even imagine eating this, letting alone calling it a legitimate "taco" meal. But something happens when you start eating healthy; you notice how amazing veggies are and don't really miss the heavy feeling of the simple carbs you used to consider a staple of your diet.
To make these lettuce wrap tacos all you need is:
Large lettuce leaves
Ground beef
Southwest seasoning
Salsa or hot sauce
Sliced peppers and/or tomatoes

1/4 purple if you use salsa
