Southwest Chicken: Three Ways

Do you precook your food to use throughout the week?  It's so helpful and makes dinner so much quicker!!  This week I cooked 4 large chicken breasts with southwest seasoning.  I actually cut them into pieces, covered them with olive oil and seasoning and cooked them with my Griddler.  I also cooked organic brown rice, which takes about 30-40 minutes so when I cook it I want to make it worth it!  You can do so many meals with chicken (and rice), but here are three of mine this week to show you what kind of variety you can get.

1.  Southwest Chicken Salad


Spinach, chopped red bell peppers, chopped baby cucumbers, one cut up slice of provolone cheese, grape halves, Southwest chicken and a pomegranate vinaigrette dressing.

1 blue
1 orange

2.  Southwest Chicken Lettuce Wraps



Southwest Chicken, Brown Rice, Grape Tomatoes and 1/2 avocado heated through in a pan, placed inside large lettuce leaves.  Served alongside peaches and grapes.

3.  Spicy Southwest Chicken Stirfry



Southwest Chicken, Chopped baby bell peppers, Brown rice, all heated through in a pan, then topped with cheese and hot sauce.  Served with steamed green beans tossed in coconut oil and sea salt.
